Fancy some moreish kumara and banana pikelets? These wee rippers are gluten free, refined flour free, dairy free and have no added sugar. Serve them with a dollop of homemade soy yogurt and raspberry chia jam. These make great kids lunch box snacks or baby lead weaning foods. Just pop them in the freezer and get a few out when you need them.⁠

Makes around 15

Ingredients:

1 cup buckwheat flour

1 cup plant milk

1 1/2 teaspoons baking powder

1 banana

1/2 cup cooked kumara

1/2 teaspoon cinnamon or vanilla essence

Blend up in a bullet or food processor. In a non-stick preheated pan with a small amount of oil add 1 large tablespoon of mixture per pikelet. Cook for a few minutes each side until golden.
