This coleslaw is easy, cheap and super fresh. Serve it with a yummy creamy dressing such as garlic yogurt or avocado and you are on to a winner. Perfect for a picnic outing to accompany some homemade vegan sausage rolls.

Ingredients

2 cups finely chopped cabbage red or white or both

1 cup grated carrot

1/2 red onion finely sliced

1 can corn kernels drained (or fresh corn when in season)

1 cup of fresh herbs ( I like to use a combination of parsley, coriander and mint)

top with toasted sesame seeds

optional roasted cashews of peanuts for some added crunch
