If you havn’t tried jackfruit before I highly recommend you give it a go! The texture is amazing, a bit like pulled pork, and it takes on the rich flavors of this marinate to create a delicious smoky BBQ filling.


Serves 4

Ingredients

2 cans jackfruit (in brine)

Jackfruit marinade

2 tablespoon apple cider vinegar

2 tablespoons maple syrup

1/2 teaspoon salt

1 teaspoon smoked paprika

4 tablespoons tomato paste

2 teaspoon ground cumin

2 teaspoons cornflour

3-4 drops liquid smoke (optional)

For the sauce

1 cup vegetable stock

2 onions

4 cloves garlic


Re-fried beans (optional)

1 can black beans (rinsed and drained)

2 teaspoon onion powder

2 cloves garlic

2 tablespoons lemon juice

3 tablespoons water

1/4 teaspoon salt

1 teaspoon ground coriander


Tacos

soft taco shells

avocado

1 can of corn kernels

coleslaw (chopped cabbage, grated carrot and finely sliced red onions)

fresh coriander

BBQ sauce (or hot sauce)

dairy free yogurt


Drain jackfruit and pull apart into small pieces. Jackfruit in a tin usually comes in triangles, it often has a hard core at the tip of the triangle like a pineapple. I like to remove any hard bits. Next mix all the marinade ingredients together in a large bowl. Add the pulled jackfruit, stir through the marinade and cover with a plate. Leave on the bench for 30 minutes or more to soak up the flavors. In the mean time saute the chopped onions and garlic in a pan for 10 minutes until nice and soft.

Now move on to the re-fried beans. Add all ingredients to a food processor bullet or use a mix stick to blend well into a paste.

Once your jackfruit is marinated add to onions and garlic in the pan and cook on a medium head for 5 minutes. Add 1 cup of stock and simmer for a further few minutes until the liquid thickens into a rich sauce.

To assemble your taco: warm tacos in a microwave for 10 seconds, spread some refried bean paste on, add 1-2 tablespoons of jackfruit mixture and then top with coleslaw, corn, avocado, fresh coriander, BBQ sauce and yoghurt. Now if you are like me your taco will be bursting at the seems and very ungracefull to eat but so so delicious!
