Anzac biscuits are such a favorite of mine . With the chewy oaty, caramel and coconut flavour you just cant beat em. I have to admit these ones don’t often make it to the oven. I like to roll the raw mixture into balls and freeze them for that after dinner sweet treat you sometimes need. These are seriously good!

Makes around 18 cookies

Ingredients:

1 cup desiccated coconut

2 cups rolled oats

1/4 cup whole meal flour

1/4 teaspoon salt

1 teaspoon baking soda

1/3 cup boiling water

1/2 cup peanut butter (or coconut oil)

1/4 cup maple syrup

1 cup dried dates

Preheat oven to 170 degrees Celsius. In a large bowl mix together coconut, rolled oats, flour and salt. In a separate bowl combine boiling water, peanut butter, maple syrup and chopped dates and baking soda. Using a stick blender, blend into a thick date caramel. Add the date caramel to the dry ingredients and mix well. Roll mixture into large walnut sized balls with damp hands. If freezing for a bliss ball treat, roll in coconut, and place in a freezer safe container. If cooking, put balls on a non-stick baking mat or baking paper, flatten gently with a fork and cook for around 8 minutes until slightly golden. Transfer on to a cooling rack.
