This is such a versatile dish, it is great for adding in wraps, boosting salads and filling a pitta pocket.

Ingredients

2 cups of bulgur wheat

2 cups of boiling water + 2 teaspoons of vegetable stoke

2 tomato’s

1 small red onion

1 cups of fresh herbs (I like to use mint and parsley)

juice of 1 lemon

salt and pepper

In a large bowl add bulgur wheat and cover with boiling water and stir in vegetable stoke. Cover with a plate and let sit for 10minutes. Finely chop tomatoes, herbs and red onions. After 10minutes add these to the bulgur wheat. Squeeze in lemon juice and season with salt and pepper.
